Coriander Pesto - A Vibrant Burst of Freshness

A good fresh green sauce or pesto takes lamb, beef, chicken and fish to new level of deliciousness and adds a fresh zesty burst to your barbequed food.

You can you swap the coriander out for parsley if you prefer. Any soft herbs works well, and depending on what you're cooking and if you are combining herbs, woody herbs will work too!

We’ve used a food processor but if you don’t have one your can chop it all up with a good sharp knife!

Ingredients 

1 ½ bunches of coriander

¼ c Pine Nuts

1/3 c Parmesan cheese, grated

¼ c Olive oil

¼ tsp sumac

Salt and Pepper, to taste

Method

Place coriander, nuts, Parmesan, sumac salt and pepper in a small food processor and blitz for about 30 seconds.

Add olive oil and blitz until well combine and chopped.

If it looks a little thick slowly add more olive oil until it gets to a consistency you like.

Check the seasoning and adjust if needed.
