BBQ Vegetable Mixed Grill

Vegetable Mixed Grill
Serves 6 as a side

We are fall or grilling our vegetables! That smokey touch when the flame hits them makes them delicious, and the texture from barbequing them is like no other!

You can pretty much grill any veg you want to and we've kept this recipe pretty simple. Once you master the basics, you can start to experiment.

Ingredients

1 eggplant, sliced and rubbed with a cut lemon
6 Roma tomatoes, sliced through the middle
2 zucchini, sliced on an angle
2 Spanish onions, cut into rings
1 yellow capsicum, sliced
2 tbsp olive oil
1 tsp sumac
2 sprigs Rosemary, leaves removed
Salt and pepper, to season
1 tbsp balsamic vinegar

Method

Heat grill over medium flame

Place prepared veggies in a bowl, add olive oil, sumac and salt and pepper and toss to coat

Place the veggies on the grill in a single layer and close the hood

Grill for about 3 mins then flip and grill for a further 2 mins with the hood closed

Place on a platter, drizzle over balsamic, season with salt and pepper and scatter over Rosemary leaves.
