BBQ Crispy Skin Salmon

Serves 4

Salmon is a highly nutritious fish and shouldn’t be afraid to cook it on the BBQ. As long as you pay attention to the flame and oil the skin so it doesn’t stick and tear, you will be fine.

Your AlfrescoKing cast iron grill plate is reversible and you’ll want to use the flat side of your plate for this recipe.  It will ensure you get nice even crispy skin.

Serve with your favourite greens!

Ingredients

4 skin-on salmon fillets

Olive oil

Coarse salt

Cracked pepper

1 lemon, cut into wedges

Method

Heat the BBQ plate over medium-high flame.

Rub the salmon fillets with olive oil and season well with salt and pepper.

Place the salmon on the grill and cook for about 4 mins or until the skin is crispy.

Carefully turn the fillets over and cook for another minute, or until cooked to your liking.

Serve with your favourite greens! We've gone with steamed green beans with cripsy garlic and drizzed with olive oil.
